Hey guys. I’m interested in trying organ meat, after hearing about the health benefits in Saifedean’s podcast with Paul Saladino. However, I’m not someone who likes raw meat. Any suggestions for the best way to buy, cook, or order liver, heart, or other organ meats?

I think the easiest way to get into it is to grind it up into ground beef. You can do it yourself if you have a meat grinder, or you can ask a butcher to do it. The taste of organs is something that takes a while to get used to. For me, anyway. I haven’t graduated to just sitting down to a plate of brains just yet.

If you are using frozen liver, I have found the easiest way is to thaw a liver out a bit until it’s soft enough to cut it with a butter knife into small cubes. Then I add the cubes into the ground beef and cook as normal. If you try to cut the liver when it’s completely thawed, it can be quite slimy.

We use this method to hide liver in taco-seasoned ground beef and our child doesn’t even realize he’s eating liver.

Rex, I’ll try your idea of cubing the partly frozen liver etc. Thanks, sounds easy.
